🥕 VegetablesArtichoke (Cynara cardunculus var. scolymus) is a Mediterranean perennial that is most often grown here as an annual from an early indoor start — what you harvest are the unopened flower buds. It needs a long season (sow as early as February), a sunny spot and rich soil. Harvest begins in July; a bud should be firm and closed — once it opens it is no longer edible, though it flowers beautifully. In mild spots the clump can be overwintered under a thick layer of mulch and harvested for years to come. An imposing plant that graces an ornamental bed too.
